"Healthy" Beef Enchiladas
1 can fat-free spicy refried beans
8 (8 inch) flour tortillas
8 ounces 96% lean ground beef
1 can enchilada sauce
1 cup 2% cheddar cheese
Chopped green onions (optional)
Preheat oven to 400 degrees.
Cook ground beef with green onions and seasonings to taste. Stir in refried beans and half of the cheese. Divide mixture evenly between the eight tortillas. Roll tortillas and arrange seam side down in a rectangular baking dish. Pour enchilada sauce over tortillas. Sprinkle with remaining cheese.
Bake at 400 degrees for 15 minutes or until bubbly and cheese is melted. Top with onions, if desired.
Makes (8) Servings

Chicken Stirfry

8oz Chicken Breast
1 cup Stirfry Vegetables
2 Packets of Splenda
1/2 tablespoon Olive Oil
1 dash of ginger
1 dash of black pepper
A few squirts of soysauce

Cook the chicken as you normally would. Then chop into small chunks. In a bowl mix the two packets of splenda, ginger, black pepper, 1/4 tablespoon of olive oil, and a few squirts of soy sauce. Fry veggies with remaining olive oil, then throw the chicken chunks into the hot pan then dump in the sauce. Stir around for a bit then serve.

Each makes one serving that has
270 Calories
10.5 grams of fat
6 grams of carbs
36 grams of protein

Healthy Corn Bread To go with the chili previously posted....

Ingredients
1 cup cornmeal
1 cup whole wheat flour
1/2 teaspoon salt
3 teaspoons baking powder
1/3 cup oil
1/3 cup honey
1 egg
1 1/2 cups milk


Directions
1. Combine the dry ingredients in a large bowl.
2. Combine the wet ingredients using a beater. Add to the dry. Do not overmix.
3. Pour into a 9x13 cake pan, or 12 muffin tins.
4. Bake for 20 minutes at 400 degrees F.
