I like to make this on Sunday night and have it 2 meals each on Mon and Tues...

Nutrition is approx:
31.5 pro;
34 carb;
11 Fat
361 cal.....

Healthy Beefy (or Turkey) Spanish Rice


• 2 cups long grain brown rice, cooked
• 12 oz lean ground beef (I use 1 1/4 lb 93% Ground Turkey)
• 1 green bell pepper
• 1 large onion (approx 2 cups chopped)
• One 14.5 oz can of diced tomatoes
• 2 tbsp tomato paste
• 2 tsp thyme
• Dash of Black pepper
• Dash of Garlic powder
• Tabasco sauce to taste (optional)
• Worcestershire sauce to taste (optional)

Yield: makes 4 servings

1.) Begin by starting to cook your rice (rice cooker recommended).
2.) Next, prepare a large, deep sauté pan by coating the surface with a non stick cooking spray.
3.) Chop the onions and green peppers, and sauté them until they begin to soften. Add the ground beef, stirring until evenly browned.
4.) Add the diced tomatoes and tomato pace. Add spices (thyme, black pepper and garlic powder) to your liking. Add Worcestershire sauce for additional flavor and or Tabasco sauce to make hot and spicy.
5.) Stir in the rice and serve.

Sounds good, I would imagine you cook the beef seperate, then drain before combining it with the veggies.

I actually don't......since I use 96% hamburg, 93% or 99% turkey there isn't too much grease....and then I'll let it cook a little longer to cook off.....the grease adds a little to the flavor :-)
