It’s basically like a slightly leaner beef. It’s not game in the sense we think of it, just a big old ancient cow like thing. It’s good though. I really wish we had better access to seafood here. Montana, obviously, doesn’t have salt water fishing, but also people don’t tend to be wealthy enough, as in WA or CA or NY, that the markets can afford to keep good king salmon without having to throw much of it out because nobody will buy it.
