And that's not likely to change after Allen Campbell, the personal chef for Brady's family, spoke to boston.com and described what the 38-year old, whose team is the No. 2 seed in the AFC as the playoffs begin this week, does and doesn't eat.

Mostly, there's a lot he doesn't eat.

"So, 80 percent of what they eat is vegetables," Campbell said. "[I buy] the freshest vegetables. If it’s not organic, I don’t use it. And whole grains: brown rice, quinoa, millet, beans. The other 20 percent is lean meats: grass-fed organic steak, duck every now and then, and chicken. As for fish, I mostly cook wild salmon.


"It’s very different than a traditional American diet. But if you just eat sugar and carbs—which a lot of people do—your body is so acidic, and that causes disease. Tom recently outed Frosted Flakes and Coca-Cola on WEEI. I love that he did that. Sugar is the death of people."

Campbell, a Massachusetts native, met Brady and his wife, model Gisele Bundchen, while he was working in Miami at the Gansevoort Hotel. The chef is a big believer in plant-based eating, and says, "my philosophy is that a plant-based diet has the power to reverse and prevent disease." The chef Brady and Bundchen retained prior to Campbell cooked in much the same way, and they were looking for someone who would continue that in a new family chef.


As for what Campbell doesn't use, it's a considerable list, and includes some things that might surprise you:

"No white sugar. No white flour. No MSG. I’ll use raw olive oil, but I never cook with olive oil. I only cook with coconut oil. Fats like canola oil turn into trans fats. ... I use Himalayan pink salt as the sodium. I never use iodized salt.


"[Tom] doesn’t eat nightshades, because they’re not anti-inflammatory. So no tomatoes, peppers, mushrooms, or eggplants. Tomatoes trickle in every now and then, but just maybe once a month. I’m very cautious about tomatoes. They cause inflammation.


"What else? No coffee. No caffeine. No fungus. No dairy.


"The kids [Brady and Bundchen have a son, Benjamin, and daughter, Vivian] eat fruit. Tom, not so much. He will eat bananas in a smoothie. But otherwise, he prefers not to eat fruits."

It sounds like a bit much to many of us, who aren't reliant on our bodies being at maximum function to do our respective jobs, but that's exactly why Campbell enjoys working for Brady and Bundchen.

"I think that’s what makes [the job] so gratifying for me. If I was cooking for anyone else who didn’t respect and appreciate my food as much as they did, it wouldn’t be as gratifying for me," he said. "I think that’s what makes me happy at the end of the day. I get to really do what I want, and they get to benefit."

I've preached an alkaline diet for the past decade and people have laughed but it truly is the most healthy and vibrant diet you could have. its common sense!

this fucker is going to be 39 and he is still playing all pro football. wish he would start eating shit so he could retire!
 
Thanks for the interesting read. Indeed, it is a very good diet, but I would dare to say that for most people it would be very hard to follow. However, it is better to at least get close to this kind of diet, rather than do nothing at all.
 
If you want to stay on top of your game in a violent sport especially at that age, I can see why he would go for this plan. Just shows when you want something and put the work in , what kind of results are possible.
 
I've heard that nightshade veg can actually increase inflammation in the body. Peppers being one of the top ones for causing inflammatory issues.
