So I'm currently trying a carb back-loading diet. Question: is it okay to wait until after weight training AND 30 mins of HITT cardio to introduce dextrose or is better to intake the dextrose between the two? I'm currently taking it after weights and cardio...

Yes that's is what you need to do. What helped me the most was sitting down with a list of foods and their macros so that I can make a list of foods I enjoy eating and that fit the diet. Also make a list of foods that you can alternate with when one gets too old to eat.
