Hola, it's so hard to find evo diet details and answered questions browsing dozens of old threads and gathering bits of vital information.. It would be nice having one thread devoted to q&a's with everything in one place.. Anyway, I can start :) :
1) Can you tell me please if i can take a protein bar on evo diet? I mean do fiber from it counts as daily carb intake? It consists 8f protein 21g carbs 21g ( 17 of which is fiber, 1 sugars and 1 erithrol).
2) how can I know I'm in ketones? Ketostix showing that I have I have so ketones in my body, but it's about 65-70% of max on stix scale, so I'm not maxed on ketones and just a bit over, so am I in ketones (day 6, tomorrow is carb loading) or my ketones indicator should be showing max value to say I'm in ketones?
 
bro here you go...
1) bro protein bars with carbs are a no go
2) if you're showing ketones, you're in ketosis
3) ketosis range can vary but as long as you're in ketosis, and showing ketones...you're good...

though I always thought we don't count fiber as carbs..

I also kinda stuck calculating my calories, as my only activity is 5\week gym+treadmill, rest of the time im in front of PC, so 2600-2900cals on evo diet as maintenance seems way too much for my cutting needs (6 feet 293lbs, ~30% bf, 410x2reps deadlift, 340x2-3 reps bench)
 
You will be able to lower down the calorie intake with a little bit of time. You can do the following - week 1 take 2900 calories, week 2 2800 calories, week 3 2700 calories, week 4 2600 calories, week 5 2500 calories, week 6 2400 calories. And from there on stick to 2400 calories per day. It is not always good to restrict excessively the calorie intake, as well as reduce it drastically. In fact, you body may react by increasing fat content.

Fiber does still count. Sugar alcohol's still count. Everything counts. (Sugar alcohol's actually have 7 calories per gram, where as carbs only have 4 but that's a whole different story).

Protein bars are pretty much the equivalent of eating a snickers bar and drinking a protein shake. Stick with whole foods and whey isolate shakes. Quest bars are OK once in a while as a treat but shouldn't be a staple in your diet.

Don't get overly concerned about being in Ketosis. You can still effectively burn fat out of ketosis. If you are carb loading once a week, that is what is taking you out of ketosis. It takes most people a week (minimum) to fully get into ketosis.

I would recommend worrying more about following a diet based around on whole nutritious foods and watching total calorie intake then worrying about following a ketogenic diet. You can still effectively burn fat while eating carbohydrates.

eatting natural and healthy is a good start. so many people are obsesssed with use fade diets but never learned how to eat properly in their life
