Zucchini pancakes

My girl cooks from time to time some pancakes made of zuucchinis, eggs and a bit of flour. Just a tiny little bit of the latter one. How healthy do you think this can be? I really like their taste, but maybe there is a way of making them healthier?
 
This is already a pretty healthy meal. Yeah, the flour is not a good thing, but I don't see what else could be used to stick everything together together. Perhaps the only way of making those healthier, would be to cook on a non-sticking frying pan, which allows not to use oil.

You can substitute ~ Parmesan Cheese for the Flour.

He's a Recipe ~ but Personally, I'd take the Nutmeg out, don't care for it in this dish................... JP

Personally I use almond and coconut flour for things... I prefer that over flour even with the higher fat and caloric content
 
The only thing unhealthy in the recipe is the flour.

Easy fix though. Blend up oatmeal into a powder with a blender or magic bullet. Use that instead of the flour.

Make that small switch and you have a very healthy recipe on your heads my friend.

And what a good lesson that sort of thing is because such lessons tend to allow for more dietary options with respect to an otherwise restricted and sometimes bland diet. It's all about our having to be creative.

Exactly! Pancakes and biscuits I love made this way... It's very helpfully especially when trying to limit carb intake and or eat primal

I agree quite completely, elvis.
Moreover and in my opinion, pancakes and other such foods made this way are far better than traditional pancakes and the like because they are far less dense. To me, eating traditional pancakes, biscuits, etc., is much a akin to eating glue - they "stick" to my stomach, thereby causing me a touch of lethargy.

More of an American thing than a UK thing.

No alternative recipes for, say, bangers and mash, eh, Mobster? ;-)
