It's just a good way of playing it safe, another sign is wen u first see the blood beading flip it.
This means it's just past rare

For a rare you want to flip it just before u see the blood coming up

Many different ways to tell
 
If u eat steak blue and you want a good crust on it

Season it and let it sit out for 20 minutes

This will get you that nice crust without over cooking it
i like a good steak crust and rare in middle :)
